Becky's Famous Brownie Recipe

Everyone has that one recipe that is their own and everyone else gets excited when they make them. Mine is chocolate brownies. All my friends love my brownies, some even say they are perfect which is a huge compliment as I am rubbish at cooking! Last year I made this rather cute brownie mountain and we had it on the table at Christmas, it looked so cute! I thought I'd share my secret recipe with everyone as they are actually ridiculously easy to make and require no effort whatsoever.

Fun Fact: This recipe is an edit of one out of a children's baking book. My Mom got the book for a bargain price thinking it would have no use but as a self-confessed bad cook, it's actually come n handy on many occasions! It's written for children so it is stupidly easy to follow.

The brownie recipe, as nice as it was in it's original published form, wasn't quite gooey enough for my liking so I adjusted some of the ingredients to make the perfect brownie!

Ingredients (Makes around 12 - 16 brownies)
100g of plain chocolate
150g of unsalted butter
150g of plain flour
15g of cocoa powder
300g of soft light brown sugar
1 pinch of salt
2 eggs
1tsp of vanilla extract
1/2 tsp of baking powder
Bonus level: Want more than just plain chocolate? You can add 100g of extra goodies such as pecan nuts, crushed oreos or chocolate chips to make the brownies extra special.

Let's Bake!
  1. Preheat the oven to 180C/350F/Gas 4. Don't skip this bit or leave it too late as the texture of the brownie depends on the time and heat it's in the oven. Grease & line a baking tin with non-stick baking paper. I like to prepare two tins just in case.
  2. Break chocolate into a glass bowl and add the butter. Pop this bowl over the top of a pan of simmering water to melt the chocolate and butter.
  3. Once it's all melted, take the bowl off the heat.
  4. While you wait for the chocolate to cool a little, you can sieve the flour, cocoa powder, baking powder and salt into another bowl.
  5. Now you need a third bowl. This needs to be pretty large as this is the one where all the ingredients mix together. In this large bowl, beat the eggs. Once beaten, add sugar and vanilla extract. Stir everything until it's all mixed.
  6. Fold in the melted chocolate to the large bowl with the egg mix. Once you have a weird chocolate-egg mix, you can fold in the flour mix then get mixing! If you're making bonus level brownies, you can add in your extra goodies at this stage and mix them too. You'll know it's all mixed as there will be no visible flour left.
  7. Put all this mixture into the baking tin. Put in the oven for 25 - 30 mins.
  8. When you get the mixture out, it will look a bit liquid still. DO NOT PUT IT BACK IN THE OVEN! It is cooked, and once it's cooled they will be solid and ready to eat. If you cook them any longer they will lose their gooey inside.
  9. Let it all cool down and cut into squares. The white 'snow' on the photograph is icing sugar that I sieved on top.
