Chocolate Vanilla Cookies for Mother's Day


Does anything feel better than DIY gifting? One of the easiest things to make yourself as a gift is cakes, cookies, anything you can bake! As part of Cotton Traders project for Mother's Day, I'll be showing you how to make these amazing vanilla-chocolate double stacked cookies, which I am sure will go down an absolute treat if you decide to make these for Mother's Day!





Baking these was hilarious. I actually got my Mom to help me bake them and we had such a laugh making these cookies.It was nice to spend a little bit of time with my Mom; we used to bake all the time when I was a kid so it was good to relive old memories.

The recipe for these delicious cookies is inspired by one from my new baking book The Hummingbird Bakery Life is Sweet (which I highly recommend - it's such a good book if you like baking), but you could use pretty much any chocolate cookie recipe on the internet. The basic ingredients are plain flour, cocoa powder, butter, caster sugar, an egg, bicarbonate of soda and baking powder. Combine them all, then make dough balls out of the mixture and place on a baking tray. Bake for ten minutes, quickest bake ever, and then take them out and place them on a wire cooling rack.

Now mix icing sugar with butter and a dash of vanilla essence, and if possible use a piping bag to pipe the butter cream onto one cookie. Then pop another cookie on top, like an Oreo, and there you have it! Delicious cookies ready to be eaten. You could even experiment with the flavours here... I think mint flavouring or strawberry would go down really well with the chocolate cookies.To present as a gift, pop them into little gift bags with some ribbon on top.
